I followed Marion Kitchen with a few twist and adjusted to my taste.

Rib eye / New yolk steak
Sprinkle with salt & pepper both sides with a dash of fish sauce.
Sous vide @ 129 - 130 (for medium rare)x 1.5 hour, then sear both sides (or just grill the steak / pan fry, whichever method you prefer) let rest 10 mins, cut  into thin slices.

Prep: Cucumber / tomatoes / cilantro / purple onion / romaine lettuce:

For the sauce:
2 Tablespoons fish sauce
2 Tablespoons palm sugar
2-3 Tablespoons lime juice
1 shallot, thinly sliced
3 green onion, chopped.
2 Tablespoons cilantro stem only (use the leaves for salad), smash them in a mortar.

Mix all sauce ingredients, blend well.

Mix all salad ingredients & beef (photo) in a large bowl, arrange on serving plate. Pour sauce over salad.
